Arthur Potts DawsonArthur Potts Dawson, who can list Jamie Oliver and the Roux brothers as close personal contacts, has a fundamental belief in doing what is right. And what he believes is right is to use sustainable, local and organic ingredients in his eco-friendly restaurants - and encouraging the general public to do the same.

This is what made Arthur our obvious choice recently when we decided to commission a chef to create some mouth-watering recipes. 

Arthur Potts DawsonArthur was tasked with creating a menu consisting of a starter, a vegetarian main course, a meat-based main course and a dessert, all using our delicious organic dairy produce. The results were just as delicious as you would expect from one of London's most renowned chefs and are great for people to re-create at home to be enjoyed with friends and family.

To whet everyone's appetite at the start of a meal, Arthur has injected an Italian twist into a traditional mushroom soup, by creating a Cannellini and Porcini Mushroom version. This warming and hearty soup is bursting with healthy ingredients, and finished off with a large dollop of Yeo Valley Organic Natural Wholemilk Yogurt. The dish is so filling that it would also make the perfect meal at lunchtime for all the family.

Arthur Potts DawsonArthur then created Spinach and Sage Fritters with Creamed Lentils as a vegetarian-friendly main meal but it is such a tasty dish that meat eaters will love it too. The Yeo Valley Organic Double Cream and Semi Skimmed Milk used throughout give the meal a wonderful richness.

Loin of Pork Cooked in Milk is a traditionally Italian dish but Arthur has adapted it slightly and uses a host of quality British ingredients, creating the perfect main course for meat-lovers. Simmering the pork in milk (Yeo Valley Milk of course!) for up to two hours makes the meat so succulent and tender that it can be cut with a spoon! Arthur suggests serving it with spinach to achieve a healthy, wholesome dish.

Arthur Potts DawsonThe finale is a decadent White Chocolate and Praline Mousse with Sliced Bananas and Butterscotch Sauce. Crammed full of naughty but nice ingredients, this dish is the perfect indulgent treat for the end of the meal.
